How do I choose what wood to use when smoking meat? - how much wood when smoking

I experimented with different types of wood and I found my favorite for the apple. It is one that just hit someone. I had a friend who has cut an apple tree, and he gave me a bit of wood. I used to smoke a few ribs and sternum. It was delicious! My favorite by far!

I also suggest that smoking, the use of large pieces of wood shavings not foolish burning so fast that you hardly get smoke out of them.

Most people like oak or walnut. I use the sin, because it is easily accessible where I live. Mesquite is also good, but it is very hot. It's really a matter of personal taste. Only non-elm, use pine, cedar or!

Cherry, alder, hickory, and Miskito are the woods of choice. We prefer the Miskito or walnut as a last resort, with beef or pork. The Alder is best to fish.
